Unstuffed Pepper Skillet Recipe

Ingrédients:

1 lb lean ground beef
1 medium onion, finely chopped
1 red pepper, chopped
1 green pepper, chopped
1 teaspoon minced garlic
1 (14oz / 398ml) can crushed tomatoes
1 cup low sodium chicken broth (or vegetable or beef)
1 teaspoon salt
½ teaspoon paprika
½ teaspoon cumin
¼ teaspoon pepper
1 cup Minute Rice Premium Instant Long Grain Rice
1 cup shredded mozzarella cheeseboeu

Instructions:

In a large skillet, brown ground beef over medium heat, about 4-5 minutes. Add onion, red pepper, green pepper and garlic and cook over medium heat until softened, about 3-4 minutes.

Stir in tomatoes, broth, salt, oregano, paprika, cumin and pepper and bring to a simmer over medium-high heat.
Stir in rice, cover, and remove from heat. Let sit for 5 minutes until rice is cooked through.
Sprinkle with cheese, cover and let sit for 2-3 minutes until cheese is melted. Serve.
